Type I vs. Type II Hood Systems
The first decision in any commercial kitchen exhaust installation is hood type. Getting this wrong means failed inspections, fire code violations, and a costly replacement. Here's what each type covers and which cooking operations require it.
Type I Hood
Required for: Grease-producing cooking
Fryers, griddles, charbroilers, woks, open-flame ranges — anything that produces grease-laden vapors requires a Type I hood with grease filters, a grease collection system, and a fire suppression system. NFPA 96 Section 6 governs all Type I installations. This is the most common installation for restaurants.
Fire suppression system requiredType II Hood
Required for: Heat and steam without grease
Dishwashers, steamers, ovens, and heat lamps produce heat and moisture but not grease-laden vapors. Type II hoods handle heat and condensation control without the fire suppression requirement. Lighter construction, simpler installation — but using a Type II where Type I is required is a serious code violation.
